This 7 year old single grain - single cask yeilded just 577 x 700ml bottles. It was bottled at 51.3%ABV which was the cask strength it was drawn out at. We transferred 2 x 5 year old Ex Bourbon Barrels into one x 500L Olorosso Sherry Butt on the 6th of October, 2020. We filled some of the head room with cutting water at the time of the cask change so that it could also interact with the cask - hence the lower cask strength of this whiskey. We sourced two of the Oloroso Sherry Butts directly from southern Spain. They were genuine 20 year old cellar casks, meaning they were not just seasoned with sherry, but held sherry for the past 20 years. This gives the wood an amazing depth of flavour to be imparted on the whiskey.
