From hand-selected casks by Head of Maturation, Paddy Foley, these Limited-Edition Releases embody the depth of Dingle Single Malt maturation. With particular attention on fortified wine casks that are chosen for their character, maturity and individuality which are then married together to create a Single Malt that represents a truly unique moment in our distillery. On the nose, sweet honey and sun-dried fruits with layers of candied citrus, toffee and hints of vanilla. The palette had dry sticky dates, dark chocolate and spiced oak with notes of clove and cinnamon spices weaving through. Finish is long with delicate spices, nutmeg and sugar syrup sweetness that taper into orchard fruits with a hint of toasted oak.
