The Brewers at Play series presents new beers designed to keep our brewers on their toes and our customers on tenterhooks. Made in collaboration with Busa dei Briganti from Italy, No50 in the BAP series, is a celebration of international brewing friendships. From Padua, Davide spent a few wet and windblown March days with us in Donegal to make this GOSE. We fermented it with yogurt from neighbouring Nomadic Dairies, and built the flavour profile with Donegal Natural Sea Salt from Cranford, pink peppercorns, lemon zest and thyme.
