A simple grist using heritage barley & oats was mashed & transferred to sauvignon blanc oak casks where it fermented & aged for 27 months with wild yeast captured at Lisnagra woods in Muff. Sweet & dry with a clean & gentle tartness. Expect flavours of white grape, oak and hint of honey.
